I've used this product for years on all my food use wood and I love it. It penetrates well and protects the wood. Its easy to apply. Untreated or new wood will take on a slightly richer color and looses that 'dry' look. One coat is all that is required once the wood has been treated. New wood frequently requires two coats back to back since the wood will suck it in. And that's a good thing!

I've now rubbed this oil into 11 Farberware knives and one Boos "butcher block"! The remarkable quality of this oil is witnessed in the rich color it produces in the grain of oak and maple. Moreover, water doesn't have a chance to seep into the grain following the oil's application. I'll never use another substance on wood to be prepared for use with processing food except for this and Boos beeswax cream, another solid product.
