I thought my old breadmaker was malfunctioning so I bought a new one. It didn't make any difference - the loaves still wouldn't rise as they used to - especialy with wholemeal flour. Variations to the receipe didn't help either. My wife kept suggesting adding extra gluten. I should have listened sooner. I tried increasing levels until it was right. For a recipe containing 400g of flour I needed 30g of gluten. My advice: don't doubt your breadmaker (or your wife) and add extra gluten to make up for sub-standard flour. Add this to plain flour, if you're struggling to get hold of strong bread flour. I replaced a couple of tablespoons from 450g plain flour with vital wheat gluten, it makes a decent loaf. (Experimentation may be required for your personal preference - there is lots of info out there on the internet) Arrived promptly and undamaged.
