The handle stays cool when on the stove top. Lid has a very good fit. This size pan is great for starting something on the stove top. Then going right into the oven. Heats evenly and retains heat. 1st use was a disaster. Fried chicken lost all coating. Combined further info on how to cook in s.s.pan. Following does work. . . . . . . . . . . . . . . .1st. Medium setting pre-heat. When drop of water has 'boiling water' appearance, pan ready. 2nd. 'Lightly, lightly' butter/oil pan like if you're cooking eggs. If something like hamburger won't need to. Has oils coming out as meat cooks. 3rd. Put in food. Should hear sizzle sound. If not pan not hot enough. 4th Don't move food placed in pan. It has to do a process of browning/caramelizing' on the underside of food before flipping or moving it in pan. This is why the 2nd step/above is necessary.
